My choices are endless. Most of it Polish food. Borscht, heated pink vomit in a bowl? Might be tops on my list.

Not purposefully, but it was an almost guaranteed side effect, which is a pleasant bonus...

That would be COW bowels
I was at one of my friends house who has a Spanish background and likes to BBQ Carniasadas with corn tortillas on the grill all the time. So one time he hands me something new and after I bite into it ,.. Then he tells me…. “ Oh that's Cow Intestines ! “
It tasted like hay wrapped up in rubbery fat to me , but I ate it out of courtesy and said Ummmmm
Maybe some hot sauce would have made it taste a little better.
Well that’s nothing compared to some of the stories I’ve heard from my Father . His Mother was full German and liked to cook all kinds of ghastly things when he was growing up. She would mostly cook animal guts like liver , hearts , brains , and all the disgusting things that you could find in there. According to him , they even grew chickens and ate them too. I guess there’s no sense to name them if your going to eat em for dinner later.

I've had tripe too. It's not very good if it's not cooked well, but with the right recipe it can be tasty. The texture is chewy though, like you said, and that is probably the part a lot of people could never get over.
