There an instant action mission for the Hornet that I found interesting and challenging.

You can either take ahornet with MAVE and Rockeyes and bomb the SA-11 escort of a SCUD convoy, then bomb the SCUDs as TOO or you can bomb the SCUDS and hope to make it past the SA-11s

I chose the former and it was challenging enough. I only was able to complete the mission twice, but both times the F-5 bandits got me as I was trying to sneak out NOE. Survived the ejection one time, died in the other:
