ok this is sad but it is probably real and its a very high hummidy area. The water just can't go to liquid form, it needs a surface, partial anything to touch to turn to water form. a plane flying through a high hummidy area higher up can give it this surface, which in the end gives us the con trails. Now usually this is in cold tempretures where the water in the air is ready to turn to a liquid form very very fast, as soon as contact whit a partial occurs.

Did you know that the volume of air inside a jumbo jet weighs so much that it has to be taken into account for calculations of take-off and landing speeds etc.,
