Ok, so I have been wanting to replace my PC for a while now, the old one spit the bit so to speak.
So, after doing my taxes and doing my part to fund the Imperial Federal Government, I can now go ahead with the new PC.
I do have a question. I want to run a triple screen set up for some games like iRacing, MWOline, whenever it comes out, and old standby's like STO and the star wars game that I have not even installed because the PC is Kaput! So I know 1 card will run 2 screens, 2 cards can run either 1 screen each in SLI or 3 screens (1 on main, 1 on secondary) but with graphic intense games and vid cards handling more and more graphics processing, would going to a triple SLI rig make enough sense to kind of future proof for a few years? I'm looking at Nivida 680's and 3-27" LCD's.
OR........
Go with 2 680's in SLI running 3 screens, and bump the i7 cpu to a 6 core? The price difference between adding the 3rd card or going with 2 cards and a 6 core cpu are a wash, but I dont really want to do both.
Opinions?

well first will your games run on multiple screens? you need to know that first. often games do not unless you use something like triple head to go. i do not think, even with current drivers, that video cards will aggregate multiple screens into one for a game to treat them as a single screen. so answering that first question will dictate a lot of your direction.
personally i would avoid sli if at all possible, but depending upon what you do it might be required to get good performance.
